The Carnation Evaporated Milk Company started business as the Pacific Coast Condensed Milk company in 1899. When his partner left him (in debt), E A Stuart created the Carnation company, using a recently developed evaporation process. Evaporated milk, and later sweetened, condensed milk, enabled canned milk to be kept for extended periods, despite the lack of refrigeration. Gold miners in the Fraser and Cariboo gold fields packed cans of Carnation Milk because it did not spoil for months.
The Carnation company established condenseries in Washington state, and eventually across the country. Most of the facilities have been closed and demolished, but a few remain, renovated and repurposed. Chimneys that were used to heat the milk still...
